When you order a whole calf or 1/2 calf you can have it cut up and processed any way you would like. The following is just an example of how we have the calves packaged.
Ground meat 1 lb. packages
Ribeyes ¾ - 1 ¼ “ thick 1 or 2 per package
T-Bones ¾ - 1 ¼ “ thick 1 or 2 per package
Sirloin ¾ - 1 ¼ ” thick one per pkg.
Chuck Roast we usually get the roasts 2 – 3 lbs. each
Rump Roast
Heel of Round Roast
Skirt Steak (Fajita Meat) usually packaged one steak per package
Brisket 2-3 pounds
Soup Bones yes or no
Stew Meat 1 or 2 pound packages
Liver yes or no
Tongue yes or no
Heart yes or no
Oxtail yes or no
Cutlets or Round Steaks? The cutlets are usually packaged 4 per package (about a lb.) Or you could do round steaks instead of cutlets. We don’t usually do the ribs because there isn’t a whole lot of meat on them but if you want them they can do them. What they usually do is short ribs. We usually just put that meat into hamburger meat.
There is usually quite a few roasts so if you want some of them cut into stew meat or hamburger meat they can do that too.
